Ingredients
- 2 medium zucchinis (approximately 400-500g)
- 1 cup breadcrumbs
- 1/2 cup grated cheese (like Parmesan)
- 2 eggs
- 2 minced garlic cloves
- 1 teaspoon salt
- 1/2 teaspoon pepper
- Fresh herbs (parsley or basil), to taste
- Oil for cooking
Instructions
- Grate the zucchinis and press them to remove excess moisture.
- In a bowl, mix the grated zucchinis, breadcrumbs, cheese, eggs, minced garlic, salt, pepper, and herbs.
- Form small fritter patties with the mixture.
- Heat oil in a skillet over medium heat.
- Add the fritters and cook until browned on all sides.
- Serve hot.
