Learn how to make a delicious and healthy Zucchini Chicken Stir Fry in the Air Fryer. Perfect for a quick and easy dinner option.
Ingredients
- 2 zucchini (340g)
- 4–6 boneless chicken thighs (Sizes vary)
- 1/2 yellow bell pepper
- 1/2 red bell pepper
- 1/2 green bell pepper
- 1/2 or 1/3 small onions
- 1 tablespoon (15 ml) of paprika
- 2 tablespoons (30 ml) of olive oil or avocado oil
- 1 teaspoon (5 ml) of vegetable bouillon powder
- 1 teaspoon (5 ml) of Cajun seasoning (I used a halal-friendly brand)
- 1 teaspoon (5 ml) of onion powder
- 1/2 teaspoon (3 ml) of salt
- 1/4 teaspoon (1 ml) of dry thyme
- 1/4 teaspoon (1 ml) of black pepper
- A couple of parsley leaves (optional; for garnishing)
Instructions
- Get the Vegetables and Chicken Ready
- Start by assembling all your ingredients. Rinse and chop the zucchini, bell peppers, and onion. Clean and slice the boneless chicken thighs. Aim to have the chicken and zucchini pieces similar in size for even cooking.
- Combine Ingredients in a Large Bowl
- Transfer the chicken, zucchini, bell peppers, and onion into a large mixing bowl.
- Season Well
- Generously scatter the spices and herbs over the ingredients. Use either a clean hand or spatula to thoroughly blend everything together.
- Cook in the Air Fryer
- Here comes the exciting part! Transfer the seasoned mixture to the air fryer basket. Set the temperature to 400°F and cook for 10 minutes. Preheating the air fryer is optional. (Note: I chose not to preheat mine).
- Check Progress Midway
- Halfway through cooking, use a meat thermometer to confirm the chicken is fully cooked. If needed, extend the cooking time. Enjoy your meal! Suggestion: Cook in smaller batches to prevent overcrowding the air fryer; I divided this recipe into two batches.
Notes
- Ensure the chicken and zucchini pieces are cut to similar sizes for even cooking in the air fryer.
- Use a meat thermometer to check the chicken’s doneness halfway through cooking to prevent overcooking.
- Enhance the dish by incorporating additional vegetables like cherry tomatoes or mushrooms for added flavor and nutrients.
