Description

A colorful and flavorful dish featuring grilled bell peppers, zucchini, cherry tomatoes, and red onion marinated in a zesty mix of olive oil and spices.


Ingredients

  • 2 cups bell peppers (various colors), cut into chunks
  • 1 cup zucchini, sliced
  • 1 cup cherry tomatoes
  • 1 cup red onion, cut into chunks
  • 1/4 cup olive oil
  • 2 tablespoons soy sauce
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Skewers (wooden or metal)


Instructions

  1. In a bowl, whisk together olive oil, soy sauce, lemon juice, garlic, oregano, paprika, salt, and pepper to create the marinade.
  2. Add the vegetables to the bowl and toss to coat them in the marinade.
  3. Let the veggies marinate for at least 30 minutes.
  4. Preheat the grill to medium-high heat.
  5. Thread the marinated vegetables onto skewers.
  6. Grill the kabobs for about 10-12 minutes, turning occasionally, until the veggies are tender and slightly charred.
  7. Remove from the grill and serve hot.

Notes

For perfect kabobs, cut the vegetables into uniform sizes and avoid overcrowding the skewers. If desired, let them marinate longer for enhanced flavor.
