These zesty shrimp tacos are bursting with fresh cilantro and lime flavors, topped with a creamy slaw for a delightful meal.
Ingredients
- 1 lb shrimp (peeled and deveined)
- 1/4 cup fresh cilantro (chopped)
- 2 tbsp lime juice (freshly squeezed)
- 8 small corn or flour tortillas
- 2 cups cabbage (shredded)
- 1/2 cup mayonnaise
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- In a bowl, combine shrimp with lime juice, cilantro, chili powder, cumin, salt, and pepper. Let it marinate for at least 15 minutes.
- In another bowl, mix shredded cabbage with mayonnaise, lime juice, salt, and pepper until well combined.
- Heat oil in a skillet over medium-high heat. Add marinated shrimp and cook for 3-4 minutes until pink and opaque.
- Briefly warm tortillas until pliable.
- Place shrimp on each tortilla and top with creamy slaw. Garnish with extra cilantro if desired.
- Serve immediately with lime wedges.
