Description

A bright and hearty dish featuring white fish fillets in a rich, flavorful Puttanesca sauce made with tomatoes, olives, and capers.

Ingredients

  • 2 white fish fillets (e.g., cod or haddock)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup kalamata olives, pitted and chopped
  • 2 tablespoons capers, rinsed
  • 1 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add minced garlic and sauté until fragrant.
  3. Stir in the diced tomatoes, olives, capers, and red pepper flakes. Simmer for about 10 minutes.
  4. Season the white fish fillets with salt and pepper, then place them in the skillet with the sauce.
  5. Cover and cook for 10-12 minutes or until the fish is cooked through and flakes easily with a fork.
  6. Garnish with fresh parsley before serving.

Notes

For a bolder flavor, let the sauce simmer longer. Pair with crusty bread or serve over pasta for a heartier meal.
