Description

A healthier take on crispy shrimp using the air fryer, combining crunchy panko coconut coating with juicy shrimp for a satisfying treat.


Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1/4 cup all-purpose flour
  • 2 large egg whites
  • 1/2 cup panko breadcrumbs
  • 1/2 cup unsweetened shredded coconut
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • Salt and pepper to taste


Instructions

  1. Ensure shrimp are peeled and deveined, then pat dry.
  2. In one bowl, place flour. In a second bowl, whisk egg whites until frothy. In a third bowl, mix panko with shredded coconut and seasonings.
  3. Dredge shrimp in flour, dip in egg whites, then coat with the panko-coconut mixture.
  4. Preheat air fryer to 400°F (200°C).
  5. Arrange shrimp in a single layer in the air fryer basket, avoiding overcrowding.
  6. Air fry for 8-10 minutes, flipping halfway, until shrimp are golden brown and crispy.

Notes

Avoid overcrowding the air fryer basket for even cooking. Experiment with seasonings for added flavor.
