A healthier take on crispy shrimp using the air fryer, combining crunchy panko coconut coating with juicy shrimp for a satisfying treat.
Ingredients
- 1 lb large shrimp, peeled and deveined
- 1/4 cup all-purpose flour
- 2 large egg whites
- 1/2 cup panko breadcrumbs
- 1/2 cup unsweetened shredded coconut
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- Salt and pepper to taste
Instructions
- Ensure shrimp are peeled and deveined, then pat dry.
- In one bowl, place flour. In a second bowl, whisk egg whites until frothy. In a third bowl, mix panko with shredded coconut and seasonings.
- Dredge shrimp in flour, dip in egg whites, then coat with the panko-coconut mixture.
- Preheat air fryer to 400°F (200°C).
- Arrange shrimp in a single layer in the air fryer basket, avoiding overcrowding.
- Air fry for 8-10 minutes, flipping halfway, until shrimp are golden brown and crispy.
Notes
Avoid overcrowding the air fryer basket for even cooking. Experiment with seasonings for added flavor.
