Description

Delicious and comforting baked salmon sushi bake cups, combining marinated salmon with seasoned sushi rice for a cozy family meal.


Ingredients

  • 2 cups cooked sushi rice (jasmine or any short-grain rice)
  • 2 tablespoons rice vinegar
  • 1 tablespoon mirin
  • 1 tablespoon sweetener (agave works well)
  • 6 pieces roasted nori seaweed (cut into 4 squares)
  • 8 oz salmon, skinless, cubed
  • 2 tablespoons soy sauce
  • 2 tablespoons Kewpie mayo
  • 2 tablespoons sriracha


Instructions

  1. Cut the salmon into one-inch cubes, ensuring even cooking.
  2. Marinate the salmon with soy sauce for about 15 minutes.
  3. Mix rice vinegar, mirin, and sweetener, then fold into the cooked sushi rice gently.
  4. Preheat the oven to 375°F (190°C).
  5. Layer the flavored sushi rice in an oven-safe dish, then top with marinated salmon cubes.
  6. Drizzle Kewpie mayo and sriracha, swirling for a marbled effect.
  7. Bake for 20-25 minutes until the salmon is cooked through.
