Ingredients
- 4 fish fillets (cod or tilapia)
- 2 tablespoons olive oil
- 2 cloves minced garlic
- 1 can (14 oz) crushed or diced tomatoes
- 1/2 cup pitted and sliced kalamata olives
- 2 tablespoons capers
- 1/2 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- Chopped fresh parsley (for garnish)
Instructions
- Heat olive oil in a pan over medium heat.
- Add minced garlic and sauté until fragrant.
- Stir in the canned tomatoes, olives, capers, and optional red pepper flakes. Season with salt and pepper to taste.
- Simmer the sauce for about 10-15 minutes to let the flavors meld together.
- Add the fish fillets to the sauce, cover, and cook for approximately 5-7 minutes, or until the fish is cooked through.
- Serve hot, garnished with fresh parsley.
