Ingredients

- 2 tbsp (30 g) freshly grated vegetarian cheese
- 1/2 tsp (2.5 ml) salt
- 1/2 tsp (2.5 ml) garlic powder
- 1/2 tsp (2.5 ml) paprika
- 1/4 tsp (1.25 ml) ground black pepper
- 2 lbs (900 g) red potatoes, halved
- 1 tbsp (15 ml) vegetable oil, or as needed
- 1/4 cup (60 ml) dairy-free sour cream
Instructions
- Heat the oven to 400 degrees F (200 degrees C). Lightly coat a 9×13-inch baking pan or cast iron skillet with cooking spray; add roughly 1 teaspoon of vegetable oil to cover the base.
- In a bowl, combine the vegetarian cheese, salt, garlic powder, paprika, and black pepper.
- Use a paper towel to pat the cut sides of the potatoes dry to eliminate excess moisture.
- Transfer the potatoes to a bowl, drizzle with 1 tablespoon of vegetable oil, and toss until they are evenly coated. Add the cheese mixture and toss again to cover the potatoes.
- Position the potatoes, cut-side down, on the oiled baking pan.
- Place in the preheated oven and cook for 15 to 20 minutes. Turn the potatoes over and continue cooking until they become golden and crispy, another 15 to 20 minutes. Serve with dairy-free sour cream.
