Description

A delightful combination of salmon, fresh spinach, and cherry tomatoes, seasoned with Italian flavors for a wholesome and comforting meal.


Ingredients

  • 4 Salmon fillets
  • 2 tablespoons Olive oil
  • 2 cloves Minced garlic
  • 2 cups Fresh spinach
  • 1 cup Cherry tomatoes, halved
  • 1/2 cup Chicken broth
  • 1 teaspoon Italian seasoning
  • 1/4 cup Grated Parmesan cheese
  • 8 ounces Whole wheat or high-protein pasta
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add minced garlic and sauté for about 1 minute.
  3. Place salmon fillets in the skillet and cook for 4-5 minutes on each side, or until cooked through.
  4. Remove salmon and set aside.
  5. In the same skillet, add spinach and cherry tomatoes, cooking until spinach wilts.
  6. Pour in chicken broth and add Italian seasoning, letting it simmer for 2-3 minutes.
  7. Stir in Parmesan cheese until melted.
  8. Return salmon to the skillet, spooning the sauce over the top.
  9. Serve over cooked whole wheat or high-protein pasta, or with a side of vegetables.

Notes

For the best flavor, use high-quality salmon fillets. Adjust seasoning and serve with extra Parmesan for a creamy finish.
