Description

A vibrant and delicious Tuscan Salmon Penne featuring a rich, creamy sauce paired with succulent salmon and fresh vegetables.


Ingredients

  • 4 Salmon Fillets
  • 15 Grape Tomatoes (halved)
  • 3 tbsp. Green Onions (chopped)
  • Fresh Spinach
  • 2 tbsp. Garlic (minced)
  • 4 tbsp. Butter
  • 2 tbsp. Garlic Butter
  • Fresh Lemon Juice (from half a lemon)
  • 2 oz. Chive & Onion Cream Cheese
  • 1 1/4 cup Heavy Whipping Cream
  • Olive Oil
  • Parsley (for garnish)
  • 1 box Penne Pasta
  • Salt
  • Pepper
  • Lemon Butter Garlic Seasoning
  • Blackened Seasoning
  • Complete Seasoning


Instructions

  1. Cook the penne pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil and 4 tablespoons of butter over medium heat.
  3. Season the salmon fillets with salt, pepper, and blackened seasoning, then add them to the skillet. Cook until browned and cooked through, about 6-7 minutes per side. Remove and set aside.
  4. In the same skillet, add garlic and green onions, sautéing for 1-2 minutes.
  5. Add grape tomatoes and spinach, cooking until the spinach wilts.
  6. Pour in the heavy whipping cream, garlic butter, and fresh lemon juice, stirring to combine.
  7. Add the cooked penne pasta to the skillet, tossing well to coat.
  8. Crumble the chive & onion cream cheese into the pasta and mix until smooth.
  9. Plate the pasta and top with the salmon fillets.
  10. Garnish with parsley before serving.
