A vibrant and delicious Tuscan Salmon Penne featuring a rich, creamy sauce paired with succulent salmon and fresh vegetables.
Ingredients
- 4 Salmon Fillets
- 15 Grape Tomatoes (halved)
- 3 tbsp. Green Onions (chopped)
- Fresh Spinach
- 2 tbsp. Garlic (minced)
- 4 tbsp. Butter
- 2 tbsp. Garlic Butter
- Fresh Lemon Juice (from half a lemon)
- 2 oz. Chive & Onion Cream Cheese
- 1 1/4 cup Heavy Whipping Cream
- Olive Oil
- Parsley (for garnish)
- 1 box Penne Pasta
- Salt
- Pepper
- Lemon Butter Garlic Seasoning
- Blackened Seasoning
- Complete Seasoning
Instructions
- Cook the penne pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil and 4 tablespoons of butter over medium heat.
- Season the salmon fillets with salt, pepper, and blackened seasoning, then add them to the skillet. Cook until browned and cooked through, about 6-7 minutes per side. Remove and set aside.
- In the same skillet, add garlic and green onions, sautéing for 1-2 minutes.
- Add grape tomatoes and spinach, cooking until the spinach wilts.
- Pour in the heavy whipping cream, garlic butter, and fresh lemon juice, stirring to combine.
- Add the cooked penne pasta to the skillet, tossing well to coat.
- Crumble the chive & onion cream cheese into the pasta and mix until smooth.
- Plate the pasta and top with the salmon fillets.
- Garnish with parsley before serving.
