Description

A vibrant and flavorful pasta dish featuring salmon, fresh spinach, and cherry tomatoes, perfect for a quick and healthy weeknight dinner.


Ingredients

  • 8 ounces of pasta (linguine or fettuccine)
  • 1 pound of salmon fillets
  • 2 tablespoons of olive oil
  • 3 cloves of garlic, minced
  • 1 pint of cherry tomatoes, halved
  • 2 cups of fresh spinach
  • Salt and pepper, to taste
  • Fresh basil for garnish
  • Grated Parmesan cheese for serving


Instructions

  1. Boil a large pot of salted water and cook the pasta until al dente according to package instructions. Drain and set aside.
  2. In a skillet over medium heat, heat olive oil and season the salmon with salt and pepper. Cook the salmon for 4-5 minutes on each side until cooked through, then set aside.
  3. Sauté the minced garlic in the same skillet for about one minute until fragrant.
  4. Add the halved cherry tomatoes and cook for approximately 5 minutes until softened.
  5. Stir in the fresh spinach and cook until wilted.
  6. Flake the cooked salmon into the skillet and mix with the tomatoes and spinach.
  7. Combine the drained pasta with the salmon mixture, tossing gently to coat. Serve warm, garnished with fresh basil and topped with grated Parmesan cheese.

Notes

Using fresh ingredients enhances the flavor. Customize pasta type as per preference.
