Description

A delightful dish infusing bright Italian flavors with tender salmon, sautéed cherry tomatoes, and vibrant spinach.


Ingredients

  • 2 salmon fillets
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 2 cups spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Whole wheat or high-protein pasta (optional)
  • Parmesan cheese for serving (optional)


Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add minced garlic and sauté until fragrant.
  3. Add cherry tomatoes and cook until softened.
  4. Stir in spinach and Italian seasoning, cooking until wilted.
  5. Place the salmon fillets in the skillet, season with salt and pepper, and cook for about 4-5 minutes on each side, or until cooked through.
  6. Serve over whole wheat or high-protein pasta or with a side of vegetables.
  7. Top with grated Parmesan cheese if desired.

Notes

For an extra kick, consider adding red pepper flakes during sautéing. Fresh herbs make a great finishing touch.
