Ingredients
- 2 salmon fillets
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 2 cups spinach
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Whole wheat or high-protein pasta (optional)
- Parmesan cheese for serving (optional)
Instructions
- Heat olive oil in a skillet over medium heat.
- Add minced garlic and sauté until fragrant.
- Add cherry tomatoes and cook until softened.
- Stir in spinach and Italian seasoning, cooking until wilted.
- Place the salmon fillets in the skillet, season with salt and pepper, and cook for about 4-5 minutes on each side, or until cooked through.
- Serve over whole wheat or high-protein pasta or with a side of vegetables.
- Top with grated Parmesan cheese if desired.
Notes
For an extra kick, consider adding red pepper flakes during sautéing. Fresh herbs make a great finishing touch.
