Description

A delicious and simple recipe for Tuscan Garlic Butter Salmon, featuring fresh ingredients like juicy cherry tomatoes and wilted spinach, all brought together with rich garlic butter.

Ingredients

  • 4 salmon fillets
  • 4 tablespoons garlic butter
  • 1 tablespoon olive oil
  • 2 cups cherry tomatoes
  • 1 cup spinach
  • Salt and pepper to taste
  • Fresh parsley for garnish
  • Juice of 1 lemon

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Season salmon fillets with salt and pepper.
  3. Add the salmon to the skillet and cook for 4-5 minutes on each side until golden brown and cooked through.
  4. In the same skillet, add garlic butter, cherry tomatoes, and spinach. Cook until the spinach wilts and the tomatoes are soft.
  5. Squeeze lemon juice over the salmon before serving.
  6. Garnish with fresh parsley and serve immediately.

Notes

Use a fish spatula for flipping the salmon fillets and pat them dry before seasoning for best results. Serve over rice or quinoa for an enhanced presentation.
