A refreshing and nutritious salad featuring tuna and white beans, perfect for quick meals and summer picnics.
Ingredients
- 1 can Canned tuna in olive oil
- 1 can Canned white beans
- 1/2 cup Sun-dried tomatoes, chopped
- 1/4 cup Fresh Italian parsley, chopped
- 1/4 cup Red onions, diced
- 2 tablespoons Olive oil
- 1 tablespoon Vinegar
- Salt to taste
- Pepper to taste
Instructions
- Drain the tuna and the white beans.
- In a large bowl, combine the tuna, white beans, chopped sun-dried tomatoes, chopped parsley, and diced red onions.
- In a small bowl, whisk together olive oil, vinegar, salt, and pepper to make the vinaigrette.
- Pour the vinaigrette over the salad and toss gently to combine.
- Serve chilled or at room temperature.
Notes
For added brightness, consider adding a squeeze of fresh lemon juice or a few spoonfuls of Greek yogurt for creaminess. Feel free to add crushed red pepper flakes for heat.
