Description

Crispy and gooey tuna melt fritters made with canned tuna, mozzarella, and fresh herbs, perfect for quick weeknight dinners.


Ingredients

  • 12 oz canned tuna fish, drained
  • 1/4 cup red onion, chopped
  • 3/4 cup heaping shredded mozzarella
  • 2 eggs, lightly beaten
  • 3 tbsp parsley, chopped
  • 1/4 cup mayonnaise
  • 1 tbsp Sriracha sauce
  • 1/2 tsp garlic powder
  • Salt and pepper, to taste
  • 1 tbsp olive oil
  • 1 lemon, half zested and juiced
  • 1 clove garlic, minced
  • 1/2 tsp dried mint
  • Pinch of dried mustard


Instructions

  1. In a medium bowl, add the drained tuna fish and mash it with a fork.
  2. Add in the chopped red onion, heaping shredded mozzarella, beaten eggs, chopped parsley, mayonnaise, Sriracha, garlic powder, and salt and pepper to taste.
  3. Mix everything together to ensure all ingredients are fully incorporated.
  4. Heat a non-stick pan and drizzle it with olive oil.
  5. Scoop about 1/4 cup of the mixture into the pan, flatten it gently, and cook each fritter for about 3 minutes on one side.
  6. Flip and cook for an additional 3 minutes on the other side until golden brown.
  7. Serve the fritters warm, accompanied by lemon slices or a simple aioli made from extra mayo and garlic if desired.

Notes

Let the mixture rest for a few minutes after mixing for better texture.
