Description
Crispy and gooey tuna melt fritters made with canned tuna, mozzarella, and fresh herbs, perfect for quick weeknight dinners.
Ingredients
- 12 oz canned tuna fish, drained
- 1/4 cup red onion, chopped
- 3/4 cup heaping shredded mozzarella
- 2 eggs, lightly beaten
- 3 tbsp parsley, chopped
- 1/4 cup mayonnaise
- 1 tbsp Sriracha sauce
- 1/2 tsp garlic powder
- Salt and pepper, to taste
- 1 tbsp olive oil
- 1 lemon, half zested and juiced
- 1 clove garlic, minced
- 1/2 tsp dried mint
- Pinch of dried mustard
Instructions
- In a medium bowl, add the drained tuna fish and mash it with a fork.
- Add in the chopped red onion, heaping shredded mozzarella, beaten eggs, chopped parsley, mayonnaise, Sriracha, garlic powder, and salt and pepper to taste.
- Mix everything together to ensure all ingredients are fully incorporated.
- Heat a non-stick pan and drizzle it with olive oil.
- Scoop about 1/4 cup of the mixture into the pan, flatten it gently, and cook each fritter for about 3 minutes on one side.
- Flip and cook for an additional 3 minutes on the other side until golden brown.
- Serve the fritters warm, accompanied by lemon slices or a simple aioli made from extra mayo and garlic if desired.
Notes
Let the mixture rest for a few minutes after mixing for better texture.
