Ingredients
- 12 oz canned tuna fish, drained
- 1/4 cup red onion, chopped
- 3/4 cup heaping shredded mozzarella
- 2 eggs, lightly beaten
- 3 tbs parsley, chopped
- 1/4 cup mayonnaise
- 1 tbs Sriracha sauce
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 1 tbs olive oil
- 1/2 cup mayonnaise (for lemon aioli)
- 1 lemon, half zested + full juiced
- 1 clove garlic, minced
- 1/2 tsp dried mint
- Pinch dried mustard
- Salt and pepper to taste
Instructions
- In a medium bowl, add the drained tuna and mash it with a fork until it becomes flaky.
- Stir in the chopped red onion, shredded mozzarella, lightly beaten eggs, chopped parsley, mayonnaise, Sriracha, garlic powder, and season with salt and pepper to taste.
- Mix everything together until fully incorporated.
- Heat a non-stick pan over medium heat and drizzle with olive oil.
- For each fritter, scoop about 1/4 cup of the mixture into the pan and flatten it slightly. Cook for approximately 3 minutes on each side or until golden brown.
- Remove from the pan and serve with lemon aioli or lemon slices.
