Description

A quick and tasty recipe for Tuna Melt Fritters with a golden-brown exterior and a cheesy center, serving as a comfort food staple.

Ingredients

  • 12 oz canned tuna fish, drained
  • 1/4 cup red onion, chopped
  • 3/4 cup heaping shredded mozzarella
  • 2 eggs, lightly beaten
  • 3 tbs parsley, chopped
  • 1/4 cup mayonnaise
  • 1 tbs Sriracha sauce
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1 tbs olive oil

  • 1/2 cup mayonnaise (for lemon aioli)
  • 1 lemon, half zested + full juiced
  • 1 clove garlic, minced
  • 1/2 tsp dried mint
  • Pinch dried mustard
  • Salt and pepper to taste

Instructions

  1. In a medium bowl, add the drained tuna and mash it with a fork until it becomes flaky.
  2. Stir in the chopped red onion, shredded mozzarella, lightly beaten eggs, chopped parsley, mayonnaise, Sriracha, garlic powder, and season with salt and pepper to taste.
  3. Mix everything together until fully incorporated.
  4. Heat a non-stick pan over medium heat and drizzle with olive oil.
  5. For each fritter, scoop about 1/4 cup of the mixture into the pan and flatten it slightly. Cook for approximately 3 minutes on each side or until golden brown.
  6. Remove from the pan and serve with lemon aioli or lemon slices.

Notes

Ensure the fritter mixture is the correct consistency; adjust with breadcrumbs or eggs if needed. Serve with lemon aioli for added flavor.
