Ingredients
- 500g chicken drumsticks
- 500g chicken drumettes
- 2 eggs
- 1 cup whole milk (240 ml)
- 1/4 cup (60 ml) hot sauce
- 240g flour
- Salt
- Pepper
- Vegetable oil
- 1 tsp (5 ml) paprika
- 1 tsp (5 ml) garlic powder
- 1 tbsp (15 ml) light brown sugar
- 3 tbsp (45 ml) cayenne pepper
Instructions
- Dry the chicken pieces thoroughly and place them aside.
- In a bowl, whisk together the eggs, milk, and hot sauce until the mixture is uniform.
- In a separate container, combine the flour with a good amount of salt and pepper, then add 2-3 tablespoons of the egg mixture, stirring until small clumps form.
- Dredge each chicken piece in the flour mixture, then immerse and fully coat in the egg mixture, followed by another coating in the flour mixture to ensure even coverage.
- Pour enough vegetable oil into a pot to cover the chicken pieces and heat it to 350°F.
- Carefully place the chicken pieces into the oil, moving them away from yourself to avoid splashes, and fry them in batches.
- Cook each side for about 5 minutes until they achieve a golden brown color, then transfer the chicken to a wire rack over a baking sheet and bake at 325°F until fully cooked.
- Once the oil has cooled slightly, save ½ cup for later use.
- As the chicken continues baking, combine the paprika, garlic powder, brown sugar, cayenne pepper, and the reserved warm oil to create a smooth sauce.
- After baking, coat every side of the chicken with the prepared sauce.
- To fully enjoy the Nashville hot chicken, serve it with slices of white bread and pickle chips.
Notes
- Dry the chicken pieces thoroughly before coating to ensure the breading adheres well.
- Adjust the cayenne pepper in the sauce to suit your desired level of spiciness.
- Use a meat thermometer to verify the chicken is fully cooked before serving.
