Ingredients

  • 500g chicken drumsticks
  • 500g chicken drumettes
  • 2 eggs
  • 1 cup whole milk (240 ml)
  • 1/4 cup (60 ml) hot sauce
  • 240g flour
  • Salt
  • Pepper
  • Vegetable oil
  • 1 tsp (5 ml) paprika
  • 1 tsp (5 ml) garlic powder
  • 1 tbsp (15 ml) light brown sugar
  • 3 tbsp (45 ml) cayenne pepper


Instructions

  1. Dry the chicken pieces thoroughly and place them aside.
  2. In a bowl, whisk together the eggs, milk, and hot sauce until the mixture is uniform.
  3. In a separate container, combine the flour with a good amount of salt and pepper, then add 2-3 tablespoons of the egg mixture, stirring until small clumps form.
  4. Dredge each chicken piece in the flour mixture, then immerse and fully coat in the egg mixture, followed by another coating in the flour mixture to ensure even coverage.
  5. Pour enough vegetable oil into a pot to cover the chicken pieces and heat it to 350°F.
  6. Carefully place the chicken pieces into the oil, moving them away from yourself to avoid splashes, and fry them in batches.
  7. Cook each side for about 5 minutes until they achieve a golden brown color, then transfer the chicken to a wire rack over a baking sheet and bake at 325°F until fully cooked.
  8. Once the oil has cooled slightly, save ½ cup for later use.
  9. As the chicken continues baking, combine the paprika, garlic powder, brown sugar, cayenne pepper, and the reserved warm oil to create a smooth sauce.
  10. After baking, coat every side of the chicken with the prepared sauce.
  11. To fully enjoy the Nashville hot chicken, serve it with slices of white bread and pickle chips.
