A flavorful and healthy Thai green curry fish recipe that pairs flaky fish with creamy coconut milk and aromatic spices.
Ingredients
- 400g flaky fish fillets (e.g., cod or tilapia)
- 1 can (400ml) coconut milk
- 2-3 tablespoons Thai green curry paste
- 1 tablespoon fish sauce
- 1 tablespoon brown sugar
- Fresh basil leaves for garnish
- Cooked jasmine rice for serving
Instructions
- Combine the coconut milk and Thai green curry paste in a large skillet over medium heat. Stir until well combined.
- Add the fish fillets to the skillet, gently nestling them into the sauce.
- Pour in fish sauce and brown sugar, stirring gently to combine.
- Cook for about 5-7 minutes, or until the fish is cooked through and flakes easily with a fork.
- Serve hot, garnished with fresh basil leaves, over cooked jasmine rice.
Notes
For a spicier dish, increase the amount of Thai green curry paste. Leftovers keep well in the refrigerator for a couple of days.
