A quick and authentic Thai fried rice recipe that blends fragrant jasmine rice with fresh vegetables and savory sauces for a delightful meal.
Ingredients
- 2 cups cooked jasmine rice
- 2 tablespoons vegetable oil
- 3 cloves garlic, minced
- 1 onion, diced
- 1 cup mixed vegetables (carrots, peas, bell peppers)
- 2 eggs, lightly beaten
- 3 tablespoons soy sauce
- 1 tablespoon fish sauce
- 1 teaspoon sugar
- 2 green onions, chopped
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions
- Heat the vegetable oil in a large skillet over medium heat. Add the minced garlic and diced onion. Sauté until fragrant.
- Add the mixed vegetables and cook for a few minutes, until tender.
- Push the vegetables to one side of the skillet and pour the beaten eggs into the empty space. Scramble the eggs until fully cooked.
- Stir in the cooked rice, soy sauce, fish sauce, and sugar. Mix everything until well combined.
- Add the chopped green onions and stir-fry for another couple of minutes.
- Serve hot, garnished with fresh cilantro and lime wedges.
Notes
Using leftover rice, preferably a day old, significantly improves the texture. Adjust the soy sauce and fish sauce to your taste preference.
