Description

A quick and authentic Thai fried rice recipe that blends fragrant jasmine rice with fresh vegetables and savory sauces for a delightful meal.


Ingredients

  • 2 cups cooked jasmine rice
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 onion, diced
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 2 eggs, lightly beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 teaspoon sugar
  • 2 green onions, chopped
  • Fresh cilantro, for garnish
  • Lime wedges, for serving


Instructions

  1. Heat the vegetable oil in a large skillet over medium heat. Add the minced garlic and diced onion. Sauté until fragrant.
  2. Add the mixed vegetables and cook for a few minutes, until tender.
  3. Push the vegetables to one side of the skillet and pour the beaten eggs into the empty space. Scramble the eggs until fully cooked.
  4. Stir in the cooked rice, soy sauce, fish sauce, and sugar. Mix everything until well combined.
  5. Add the chopped green onions and stir-fry for another couple of minutes.
  6. Serve hot, garnished with fresh cilantro and lime wedges.

Notes

Using leftover rice, preferably a day old, significantly improves the texture. Adjust the soy sauce and fish sauce to your taste preference.
