Ingredients

  • – 4 (170g) salmon fillets, skin removed and cut into 1-inch pieces
  • – Toasted sesame seeds, for garnish
  • – Green onion, thinly sliced for garnish
  • – 2 teaspoon (10 ml) arrowroot starch, or tapioca flour
  • – 60ml cold water
  • – 60ml low-sodium soy sauce, use tamari is gluten-free
  • – 60ml fresh orange juice, juice from 1 orange
  • – 1 tablespoon (15 ml) rice vinegar
  • – 2 – 3 tablespoon (38 ml) agave nectar, based on your desired sweetness level
  • – 1/2 teaspoon (3 ml) sesame oil
  • – 1 teaspoon (5 ml) fresh grated ginger, very fine
  • – 2 – 3 large garlic cloves, minced

Instructions

  1. Dissolve the arrowroot starch in cold water and reserve it for later use. Use paper towels to thoroughly dry the salmon pieces.
  2. In a separate small bowl or cup, combine the rest of the ingredients for the teriyaki sauce, excluding the starch mixture.
  3. In a shallow dish or a large resealable bag, coat the salmon chunks with ⅓ cup of the prepared teriyaki sauce. Allow them to marinate for 10-20 minutes.
  4. Set your air fryer to 400°F and lightly coat it with cooking oil spray.
  5. Place the marinated salmon pieces in the air fryer basket, ensuring they are not crowded. Cook them in the air fryer for 4-6 minutes until they are cooked through and have a slight crisp.
  6. While the salmon is cooking, pour the remaining teriyaki sauce into a small saucepan and heat it over medium-high until it starts to boil.
  7. After reaching a boil, lower the heat to medium-low, stir in the starch solution, and let it simmer for 3-4 minutes until the sauce becomes thicker. Adjust the seasoning to your taste.
  8. Take the salmon bites out of the air fryer and coat them with the thickened teriyaki sauce.
  9. Place the salmon on a bed of warm rice, garnished with sesame seeds, sliced green onions, and your choice of roasted or steamed vegetables, such as broccoli or edamame.

Notes

  • Ensure the salmon fillets are well dried before marinating to help them achieve a crispy texture in the air fryer.
  • Adjust the agave nectar in the teriyaki sauce to suit your desired level of sweetness.
  • Avoid overcrowding the salmon in the air fryer basket for even cooking and proper crisping. Serve over warm rice with your favorite vegetables.
