- – 60ml low-sodium soy sauce, use tamari is gluten-free
- – 60ml fresh orange juice, juice from 1 orange
- – 1 tablespoon (15 ml) rice vinegar
- – 2 – 3 tablespoon (38 ml) agave nectar, based on your desired sweetness level
- – 1/2 teaspoon (3 ml) sesame oil
- – 1 teaspoon (5 ml) fresh grated ginger, very fine
- – 2 – 3 large garlic cloves, minced
Instructions
- Dissolve the arrowroot starch in cold water and reserve it for later use. Use paper towels to thoroughly dry the salmon pieces.
- In a separate small bowl or cup, combine the rest of the ingredients for the teriyaki sauce, excluding the starch mixture.
- In a shallow dish or a large resealable bag, coat the salmon chunks with ⅓ cup of the prepared teriyaki sauce. Allow them to marinate for 10-20 minutes.
- Set your air fryer to 400°F and lightly coat it with cooking oil spray.
- Place the marinated salmon pieces in the air fryer basket, ensuring they are not crowded. Cook them in the air fryer for 4-6 minutes until they are cooked through and have a slight crisp.
- While the salmon is cooking, pour the remaining teriyaki sauce into a small saucepan and heat it over medium-high until it starts to boil.
- After reaching a boil, lower the heat to medium-low, stir in the starch solution, and let it simmer for 3-4 minutes until the sauce becomes thicker. Adjust the seasoning to your taste.
- Take the salmon bites out of the air fryer and coat them with the thickened teriyaki sauce.
- Place the salmon on a bed of warm rice, garnished with sesame seeds, sliced green onions, and your choice of roasted or steamed vegetables, such as broccoli or edamame.
Notes
- Ensure the salmon fillets are well dried before marinating to help them achieve a crispy texture in the air fryer.
- Adjust the agave nectar in the teriyaki sauce to suit your desired level of sweetness.
- Avoid overcrowding the salmon in the air fryer basket for even cooking and proper crisping. Serve over warm rice with your favorite vegetables.
