Ingredients

  • – 1/2 cup (120 ml) gluten-free mirin
  • – 1/2 cup (120 ml) beef broth
  • – 1/2 cup (120 ml) gluten-free soy sauce
  • – 1/4 cup (60 ml) brown sugar
  • – 3 pieces salmon fillets (155 g each), 4 cm thick at the thickest point
  • – Garnish: Toasted white sesame seeds (optional)
  • – 1 bulb scallion, chopped


Instructions

  1. Blend the gluten-free mirin, beef broth, gluten-free soy sauce, and brown sugar in a pot over medium warmth. Stir continuously until the sugar fully dissolves. Let the blend reach a gentle simmer, then lower the heat to medium-low and let it cook uncovered for around 10 minutes, stirring now and then, until it slightly thickens.
  2. Allow the sauce to cool down to room temperature—it will become thicker and glossier as it cools. Set it aside.
  3. In a small baking dish or casserole that comfortably fits the salmon pieces, pour one-third cup of the teriyaki sauce over the salmon. Position the salmon with the skin facing upwards and let it soak for 20 to 30 minutes, but not exceeding an hour to maintain the salmon’s texture.
  4. Line your air fryer basket with a layer of parchment paper or an appropriate air fryer liner.
  5. Gently shake off the excess sauce from the salmon pieces and place them skin side down in the basket, ensuring a little space between each piece. Dispose of the used marinade.
  6. Cook in the air fryer at 400°F (204°C) for 7 to 9 minutes, adjusting for the fillet thickness and your appliance’s specifics.
  7. For a medium-rare finish: about 7 minutes. For medium: around 8 minutes.
  8. The salmon is done when the thickest section is mostly opaque and easily separates, with a slight translucency in the center. Use a sharp knife or fork to verify, or check the internal temperature—it should reach 120°F (49°C).
  9. Move the salmon to a serving dish and coat it with more teriyaki sauce. Sprinkle with toasted sesame seeds (if desired) and chopped scallions. You may remove the skin before serving, if preferred. Serve immediately.
