Ingredients

  • 5 lb (680 g) chicken wings
  • 15 ml vinegar (any vinegar)
  • 15 ml baking powder
  • 5 ml salt
  • 5 ml red chili powder
  • 5 ml onion powder
  • 15 ml Garlic Powder
  • 5 ml paprika
  • 5 ml vegetable oil
  • 10 ml beef butter
  • 4 cloves garlic, minced
  • 1 jalapeno with seeds, minced
  • 30 ml honey
  • 240 ml chicken broth
  • 15 ml soy sauce
  • salt, to taste
  • 5-10 ml chili flakes
  • 10 ml corn starch


Instructions

  1. If you purchase whole wings, separate them into drumettes and flats, and remove the tips.
  2. Combine the wings in a bowl with a generous pinch of salt and the vinegar. Mix well and let them rest for 5 minutes. Afterward, drain the vinegar and pat the wings dry using a paper towel.
  3. Mix in the baking powder, one teaspoon of salt, red chili powder, onion powder, garlic powder, paprika, and vegetable oil. Ensure everything is evenly coated.
  4. Arrange the wings on a tray suitable for an air fryer or oven. If using an air fryer, cook at 425°F for 20 minutes, flipping them midway, and continue until they are crispy and fully cooked. If opting for an oven, bake at 425°F for 40-50 minutes, flipping halfway, and continue until they are crispy and done.
  5. In a saucepan, melt the beef butter, then add minced garlic and jalapeno. Cook until they are fragrant and softened.
  6. Pour in the honey, chicken broth, soy sauce, a pinch of salt, and chili flakes, and stir. Let it simmer over medium heat until it’s reduced by half.
  7. In another bowl, mix cornstarch with one tablespoon of water and blend thoroughly. Add this mixture to the saucepan, simmer on low heat until the sauce thickens, then pour it over the wings and ensure they are well-coated.

  • Note: After marinating, ensure to pat the wings dry to remove excess moisture for extra crispiness before coating with the baking powder mixture.
