Instructions

  1. Set your oven to 400℉ / 200℃ to preheat. Start by peeling the carrots and cutting off the tops. If you have slender, long carrots, you can keep them whole. For thicker ones, it’s advisable to cut them into halves or quarters lengthwise.
  2. In a small mixing bowl, combine the honey, vegetable oil, and minced garlic. Season with a generous pinch of salt and pepper, then mix thoroughly.
  3. Arrange the carrots in a baking dish and drizzle the mixture over them. Use your hands to ensure the carrots are evenly coated, keeping them in a single layer without overlapping.
  4. Place the dish in the oven and bake the carrots for 20 minutes. Take them out carefully, give them a stir, and return them to the oven for an additional 15-20 minutes, based on their size. Check their tenderness with a fork or toothpick to suit your preference.
