Ingredients
- 1 pound (450g) whole carrots, scrubbed and halved lengthwise
- 1 tbsp (15ml) vegetable oil
- 1 tsp (5g) garlic powder
- 1 tsp (1g) dried oregano
- 3/4 tsp (4 ml) salt
- ½ tsp (1g) cumin powder
- ½ tsp (1g) black pepper
- 2 tbsp (30ml) vegan butter
- 2 tbsp (30ml) maple syrup
- 2 tsp (10g) miso, optional
- 1/4 tsp (1 ml) salt
Instructions
- Put the sliced carrots into a big bowl.
- Pour the vegetable oil over the carrots and mix well to coat them. Add the garlic powder, dried oregano, salt, cumin powder, and black pepper to the carrots, and mix again until they are covered evenly.
- Arrange the carrots in a single layer in the air fryer basket, ensuring there is some space between them to allow air circulation. If there’s not enough room, cook the carrots in separate batches.
- Set the air fryer to 350°F and cook for 15 minutes or until the carrots are tender when pierced with a fork. If necessary, cook for a few additional minutes. Serve right away.
- In a small bowl, blend the melted vegan butter with the maple syrup, optional miso, and salt. Pour this mixture over the carrots in a mixing bowl, and stir until coated.
- Move the seasoned carrots into an air fryer-compatible bowl that fits inside the air fryer basket. Cook in the air fryer for 15 minutes, until they are fork-tender. If needed, extend the cooking time for a few more minutes.
- Place the carrots in a serving dish. Drizzle the cooking liquids over them and serve warm!
