Ingredients
- 4 pieces of salmon (6 ounces each)
- 2 tablespoons olive oil, divided
- 3 cups packed baby spinach
- 1 teaspoon Italian seasoning
- 1/2 teaspoon paprika
- A pinch of cayenne pepper
- 5.3-ounce block of feta cheese
- 1/4 cup freshly grated parmesan
- 1/4 cup chopped jarred roasted red peppers
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F and line a baking sheet with parchment paper.
- Place the salmon pieces on the lined baking sheet, skin-side down.
- Slice each piece of salmon lengthwise down the middle, ensuring you don’t cut all the way through.
- Brush each salmon piece with 1 tablespoon of olive oil and season with salt and pepper.
- Heat the remaining olive oil in a large pan over medium heat. Add the baby spinach, Italian seasoning, paprika, cayenne, salt, and pepper. Sauté until the spinach wilts.
- Stir in the chopped roasted red peppers, feta cheese, and parmesan, mixing thoroughly.
- Stuff each salmon piece with the mixture.
- Bake for 12-17 minutes until the salmon is cooked through or until the internal temperature reaches 145°F.
- Serve hot with your preferred side dish.
Notes
Allow the salmon to rest for a few minutes after baking, and consider adding fresh herbs for extra flavor.
