Description

A vibrant stuffed salmon dish featuring creamy feta, fresh spinach, and zesty roasted red peppers for a delightful and nutritious dinner.


Ingredients

  • 4 pieces of salmon (6 ounces each)
  • 2 tablespoons olive oil, divided
  • 3 cups packed baby spinach
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • A pinch of cayenne pepper
  • 5.3-ounce block of feta cheese
  • 1/4 cup freshly grated parmesan
  • 1/4 cup chopped jarred roasted red peppers
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 400°F and line a baking sheet with parchment paper.
  2. Place the salmon pieces on the lined baking sheet, skin-side down.
  3. Slice each piece of salmon lengthwise down the middle, ensuring you don’t cut all the way through.
  4. Brush each salmon piece with 1 tablespoon of olive oil and season with salt and pepper.
  5. Heat the remaining olive oil in a large pan over medium heat. Add the baby spinach, Italian seasoning, paprika, cayenne, salt, and pepper. Sauté until the spinach wilts.
  6. Stir in the chopped roasted red peppers, feta cheese, and parmesan, mixing thoroughly.
  7. Stuff each salmon piece with the mixture.
  8. Bake for 12-17 minutes until the salmon is cooked through or until the internal temperature reaches 145°F.
  9. Serve hot with your preferred side dish.

Notes

Allow the salmon to rest for a few minutes after baking, and consider adding fresh herbs for extra flavor.
