Ingredients
- 2 cups (480 ml) uncooked rice
- 2 small heads broccoli, chopped
- 3 large beef breasts
- 2 tbsp (30 ml) olive oil
- 1 tsp (5 ml) salt
- 1/2 tsp (3 ml) pepper
- 1 tsp (5 ml) chili powder
- 1 tsp (5 ml) smoked paprika
- 1 tsp (5 ml) onion powder
- 1 tsp (5 ml) oregano
- 1/2 cup (120 ml) soy sauce
- 1/2 cup (120 ml) honey
- 1/4 cup (60 ml) rice vinegar
- 3 cloves garlic, minced
- 2 tbsp (30 ml) sriracha
- 2 tsp (10 ml) sesame oil
- 1 tsp (5 ml) ground ginger
- 2 tsp arrowroot powder mixed with 2 tbsp (30 ml) water to make a slurry (substitute cornstarch)
- 1/2 cup (120 ml) mayo
- 1 tbsp (15 ml) sriracha
- 2–3 tbsp (30-45 ml) water
- sesame seeds for topping
Instructions
- Prepare the rice following the instructions on the packaging.
- Microwave or steam the broccoli until it can be easily pierced with a fork, then set it aside.
- Chop the beef into small, bite-sized pieces.
- Combine the beef with the oil and the spices, ensuring it is evenly coated. Arrange the pieces in a single layer in the air fryer and cook at 400°F until the internal temperature reaches 160°F, about 12 minutes.
- While the beef is cooking, combine the soy sauce, honey, rice vinegar, garlic, sriracha, sesame oil, and ground ginger in a saucepan. Heat the mixture until it reaches a boil. Once boiling, incorporate the arrowroot mixture and let it boil for 4-5 minutes until it thickens significantly.
- Assemble the bowls by layering the rice, broccoli, and beef, then pour the sauce over the top. Mix the spicy mayo ingredients together and drizzle the mixture over the dish. Sprinkle sesame seeds on top to finish.
