Ingredients
- 2 salmon fillets
- 1 cup fresh spinach, chopped
- 4 oz cream cheese, softened
- 1/2 cup feta cheese, crumbled
- 1/2 cup mozzarella cheese, shredded
- 1 clove garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Lemon wedges for serving
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
- Add spinach and cook until wilted.
- In a bowl, mix cooked spinach, cream cheese, feta, and mozzarella until well combined. Season with salt and pepper.
- Slice a pocket into each salmon fillet and stuff with the spinach mixture.
- Place stuffed salmon on a baking sheet, season with salt and pepper, and bake for about 20-25 minutes, or until salmon is cooked through.
- Serve with lemon wedges.

For a crispier exterior, consider broiling the salmon for the last few minutes of cooking.
