Description

A quick and flavorful dish featuring flaky salmon, creamy sauce, and vibrant spinach, perfect for busy weeknights.


Ingredients

  • 12 ounces pasta (penne, farfalle, or your choice)
  • 2 tablespoons olive oil
  • 1 pound salmon fillets (skin removed)
  • Salt and pepper (to taste)
  • 2 cloves garlic (minced)
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup freshly grated Parmesan cheese
  • 2 cups fresh spinach
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice


Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium-high heat. Season the salmon with salt and pepper, and cook for 4-5 minutes per side until cooked through. Remove and set aside.
  3. Add minced garlic to the skillet and cook for 1 minute until fragrant. Pour in heavy cream and chicken broth, bring to a simmer, and stir in Parmesan cheese until melted.
  4. Add fresh spinach and cook until wilted, about 2 minutes.
  5. Flake the salmon into bite-sized pieces and add back to the skillet. Gently fold in cooked pasta, lemon zest, and lemon juice until well combined and heated through.
  6. Garnish with additional Parmesan cheese if desired and serve immediately.

Notes

For added flavor, let the garlic become lightly golden before adding the cream and broth. Consider substituting spinach for other greens like kale or arugula.
