Ingredients
- 1 lb shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1 tablespoon Cajun seasoning
- 1 bell pepper, diced
- 1 onion, diced
- 3 cloves garlic, minced
- 1 can diced tomatoes
- 1 cup chicken broth
- Salt and pepper to taste
- Green onions for garnish
Instructions
- In a large skillet, heat olive oil over medium-high heat.
- Add the shrimp and sprinkle with Cajun seasoning, cooking until they turn pink and opaque, about 2-3 minutes.
- Remove shrimp from the skillet and set aside.
- In the same skillet, add bell pepper, onion, and garlic. Sauté until the vegetables soften, about 5 minutes.
- Add diced tomatoes and chicken broth to the skillet, stirring well.
- Return the shrimp to the skillet, simmering for about 5 minutes to combine flavors.
- Season with salt and pepper to taste.
- Serve hot, garnished with green onions.
