Description

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • 1 bell pepper, diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can diced tomatoes
  • 1 cup chicken broth
  • Salt and pepper to taste
  • Green onions for garnish


Instructions

  1. In a large skillet, heat olive oil over medium-high heat.
  2. Add the shrimp and sprinkle with Cajun seasoning, cooking until they turn pink and opaque, about 2-3 minutes.
  3. Remove shrimp from the skillet and set aside.
  4. In the same skillet, add bell pepper, onion, and garlic. Sauté until the vegetables soften, about 5 minutes.
  5. Add diced tomatoes and chicken broth to the skillet, stirring well.
  6. Return the shrimp to the skillet, simmering for about 5 minutes to combine flavors.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with green onions.

Notes

For added flavor, consider using fresh tomatoes instead of canned. Adjust the Cajun seasoning to your heat preference.
