A fun and accessible twist on traditional sushi, featuring layers of crispy shrimp, creamy avocado, and zesty spicy mayo.
Ingredients
- 2 cups sushi rice
- 2 tablespoons rice vinegar
- 1 pound shrimp, peeled and deveined
- 1 avocado, sliced
- 1/4 cup mayonnaise
- 1 tablespoon Sriracha sauce
- 1/2 cup cucumber, diced
- Nori sheets, cut into squares
- Soy sauce, for serving
- Sesame seeds, for garnish
Instructions
- Cook the sushi rice according to package instructions. Once done, mix with rice vinegar and let it cool.
- In a bowl, mix mayonnaise and Sriracha to create a spicy mayo.
- In a skillet, cook shrimp until pink and crispy, then remove from heat.
- In a mold or a small cup, layer the sushi rice, crispy shrimp, avocado, and cucumber.
- Carefully remove the stack and place it on a nori square.
- Drizzle with spicy mayo and garnish with sesame seeds.
- Serve with soy sauce on the side.
Notes
Ensure sushi rice is sticky enough to hold the layers together. Adjust Sriracha in the mayo for desired heat level.
