Description

Ingredients

  • 1 cup short-grain sushi rice
  • 2 tbsp rice vinegar
  • 1 tbsp sugar
  • 1 tsp salt
  • 1 cup cooked shrimp, chopped
  • 2 tbsp mayonnaise
  • 12 tsp sriracha (to taste)
  • 1 avocado, mashed with lime juice
  • ½ cucumber, finely diced
  • Furikake or sesame seeds (for garnish)


Instructions

  1. Rinse the sushi rice until the water runs clear.
  2. Cook the rice as per your preferred method and season with rice vinegar, sugar, and salt.
  3. Let it cool to room temperature.
  4. Combine the chopped shrimp with mayonnaise and sriracha for the shrimp mixture and chill.
  5. Mash the avocado with lime juice.
  6. In a lightly oiled mold, layer the rice, cucumber, avocado, and shrimp mixture, pressing gently.
  7. Invert onto a plate and garnish with spicy mayo, furikake, and herbs.
  8. Serve with extra sriracha or soy sauce.
