Description
A comforting and flavorful bowl of spicy shrimp ramen with vibrant vegetables and a creamy broth.
Ingredients
- 6 large shrimp (tail on)
- 1 package ramen noodles + seasoning
- 1 stalk green onion (sliced)
- 1/2 small white onion (sliced)
- 1 tbsp soy sauce
- 1 tbsp Thai red curry paste
- Sriracha to taste
- 2 tbsp unsweetened coconut cream
- 1 cup spinach or bok choy
- 1 tsp sesame oil
- 1 tbsp olive oil
- 1 1/2 cups chicken broth or shrimp stock
- 1/2 lime (juiced)
Instructions
- Heat olive oil in a medium pot over medium heat.
- Add the sliced white onion and cook until soft, about 3 minutes.
- Add shrimp and cook for 2–3 minutes per side until pink and slightly crisped. Remove and set aside.
- To the same pot, add Thai red curry paste and stir for 1 minute until fragrant.
- Pour in broth and bring to a gentle simmer.
- Stir in soy sauce, coconut cream, and sriracha to taste.
- Add the ramen noodles and cook according to package instructions.
- In the last minute of cooking, add spinach or bok choy to wilt.
- Return shrimp to the pot, squeeze in lime juice, and stir.
- Top with green onions and serve hot.
Notes
For extra depth, consider adding ginger or garlic while sautéing the onions. Customize the spiciness with sriracha as desired.
