Description

A comforting and flavorful bowl of spicy shrimp ramen with vibrant vegetables and a creamy broth.


Ingredients

  • 6 large shrimp (tail on)
  • 1 package ramen noodles + seasoning
  • 1 stalk green onion (sliced)
  • 1/2 small white onion (sliced)
  • 1 tbsp soy sauce
  • 1 tbsp Thai red curry paste
  • Sriracha to taste
  • 2 tbsp unsweetened coconut cream
  • 1 cup spinach or bok choy
  • 1 tsp sesame oil
  • 1 tbsp olive oil
  • 1 1/2 cups chicken broth or shrimp stock
  • 1/2 lime (juiced)


Instructions

  1. Heat olive oil in a medium pot over medium heat.
  2. Add the sliced white onion and cook until soft, about 3 minutes.
  3. Add shrimp and cook for 2–3 minutes per side until pink and slightly crisped. Remove and set aside.
  4. To the same pot, add Thai red curry paste and stir for 1 minute until fragrant.
  5. Pour in broth and bring to a gentle simmer.
  6. Stir in soy sauce, coconut cream, and sriracha to taste.
  7. Add the ramen noodles and cook according to package instructions.
  8. In the last minute of cooking, add spinach or bok choy to wilt.
  9. Return shrimp to the pot, squeeze in lime juice, and stir.
  10. Top with green onions and serve hot.

Notes

For extra depth, consider adding ginger or garlic while sautéing the onions. Customize the spiciness with sriracha as desired.
