Description

A quick and flavorful dish combining sardines and eggs for a nutritious meal perfect for any time of the day.

Ingredients

  • 1/2 onion, sliced
  • 3 cloves garlic, sliced
  • 2 fresh chilies (optional), sliced
  • 1 (15oz) canned sardine in tomato sauce
  • Water (about 1/4 of the sardine can)
  • 1.5 tbsp fish sauce
  • 1/2 tbsp oyster sauce
  • 1 tsp rice vinegar
  • 1 tsp sugar
  • 1 tbsp chili powder (optional)
  • 4 eggs

Instructions

  1. Heat a medium skillet over medium heat. Add the sliced onion and sauté until they become translucent.
  2. Add the sliced garlic and optional fresh chili, stirring until the garlic releases its fragrance.
  3. Introduce the canned sardines and pour in a quarter can of water. You may crush the sardines gently with a spatula if preferred.
  4. Season the mixture with fish sauce, oyster sauce, rice vinegar, sugar, and optional chili powder. Stir well and bring to a boil.
  5. Once boiling, carefully crack four eggs into the skillet.
  6. Reduce the heat to medium-low and cover the skillet. The eggs will cook through to your desired doneness.
  7. After cooking, turn off the heat, garnish, and prepare to serve.

Notes

For added creaminess, consider adding a splash more water when introducing the sardines.
