A quick and flavorful dish combining sardines and eggs for a nutritious meal perfect for any time of the day.
Ingredients
- 1/2 onion, sliced
- 3 cloves garlic, sliced
- 2 fresh chilies (optional), sliced
- 1 (15oz) canned sardine in tomato sauce
- Water (about 1/4 of the sardine can)
- 1.5 tbsp fish sauce
- 1/2 tbsp oyster sauce
- 1 tsp rice vinegar
- 1 tsp sugar
- 1 tbsp chili powder (optional)
- 4 eggs
Instructions
- Heat a medium skillet over medium heat. Add the sliced onion and sauté until they become translucent.
- Add the sliced garlic and optional fresh chili, stirring until the garlic releases its fragrance.
- Introduce the canned sardines and pour in a quarter can of water. You may crush the sardines gently with a spatula if preferred.
- Season the mixture with fish sauce, oyster sauce, rice vinegar, sugar, and optional chili powder. Stir well and bring to a boil.
- Once boiling, carefully crack four eggs into the skillet.
- Reduce the heat to medium-low and cover the skillet. The eggs will cook through to your desired doneness.
- After cooking, turn off the heat, garnish, and prepare to serve.
Notes
For added creaminess, consider adding a splash more water when introducing the sardines.
