Description

A quick and satisfying meal that combines perfectly cooked pasta with flaky salmon and a zesty kick from red pepper flakes and fresh lemon juice.


Ingredients

  • 12 oz spaghetti or fettuccine
  • 6 oz salmon fillet, skin removed
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • Salt and pepper to taste
  • Fresh parsley or basil, chopped
  • Juice of 1 lemon


Instructions

  1. Cook the pasta in a pot of salted boiling water until al dente according to package instructions.
  2. While the pasta cooks, heat olive oil in a skillet over medium-high heat. Season the salmon with salt and pepper.
  3. Add the salmon fillet to the skillet and cook for 4-5 minutes on each side, until it flakes easily.
  4. Add minced garlic and red pepper flakes to the skillet and sauté for 1-2 minutes until aromatic.
  5. Drain the pasta, reserving some pasta water, and add it to the skillet with the salmon mixture.
  6. Toss everything together with fresh lemon juice and chopped herbs until well coated. Serve hot.

Notes

For an extra layer of flavor, try grating fresh lemon zest into the dish. Save some pasta water in case the sauce needs to be loosened.
