Description

A comforting and flavorful Spanish Fish Stew with tender white fish, potatoes, and aromatic spices.


Ingredients

  • 2 pounds white fish (such as cod or haddock), cut into chunks
  • 2 large potatoes, peeled and diced
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 fennel bulb, chopped
  • 1 can (14 oz) diced tomatoes
  • 4 cups fish or vegetable broth
  • 1 teaspoon paprika
  • 1 teaspoon saffron threads
  • Salt and pepper to taste
  • Olive oil
  • Chopped fresh parsley for garnish


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the onion and garlic, sautéing until translucent.
  3. Stir in the chopped fennel and cook for another 5 minutes.
  4. Add paprika and sauté for 1 minute to release its flavor.
  5. Incorporate the diced potatoes, fish, broth, and diced tomatoes into the pot.
  6. Season with saffron, salt, and pepper.
  7. Bring the mixture to a boil, then reduce heat to simmer for 20-25 minutes or until the potatoes are tender.
  8. Serve hot, garnished with fresh parsley.

Notes

Taste as you go and adjust seasoning as necessary. Consider adding red pepper flakes for a bit of heat.
