Description

A comforting Southern classic featuring creamy grits and succulent shrimp, perfect for family gatherings or cozy dinners.


Ingredients

  • 1 lb. jumbo shrimp (peeled and deveined)
  • 4 strips of bacon
  • 2 1/2 cups chicken broth (divided)
  • 2 cups whole milk
  • 1 cup sharp cheddar cheese (shredded)
  • 4 tablespoons butter (divided)
  • 3/4 cup grits
  • Salt (to taste)
  • Black pepper (to taste)
  • Chopped green onions (for garnish)


Instructions

  1. In a medium pot, combine 2 cups chicken broth, 2 cups whole milk, and 3 tablespoons butter with a pinch of salt. Bring to a gentle boil.
  2. Gradually whisk in the grits, ensuring no lumps form. Simmer for 10-15 minutes while whisking occasionally until creamy.
  3. Meanwhile, cook the bacon in a skillet until crispy. Transfer to a paper towel-lined plate, reserving 2 tablespoons of grease.
  4. Rinse and pat dry the shrimp, then season with salt and black pepper.
  5. Sauté shrimp in the reserved bacon grease for about 2 minutes on each side until pink.
  6. Add remaining butter and 1/2 cup chicken broth to the skillet and stir until butter melts.
  7. Stir in 1 cup cheddar cheese into the grits until melted.
  8. Spoon shrimp over the cheesy grits, drizzle with skillet liquid, garnish with bacon pieces and green onions, and serve immediately.

Notes

Taste as you go and adjust seasoning as needed. For a twist, consider adding green bell peppers or garlic to the shrimp.
