Ingredients
- 2 pounds (900 g) small yellow potatoes
- 2 teaspoons (10 ml) sea salt, divided
- 2 tablespoons (30 ml) olive oil, plus more for the pans
- 1 1/2 teaspoons (7.5 ml) garlic powder
- 3/4 teaspoon (3.75 ml) onion powder
- Freshly ground black pepper
- 1 tablespoon (15 ml) finely chopped fresh herbs, parsley, chives, and/or dill
- Flaky sea salt, optional
- Vegetarian cheese, optional
Instructions
- Warm up the oven to 425°F and generously apply olive oil to two baking trays.
- In a large pot, combine the potatoes with 1 teaspoon of salt, then add enough water to submerge the potatoes by an inch. Heat until boiling, and continue cooking until the potatoes are tender and easily pierced with a fork, about 15 to 20 minutes.
- Pour out the water and let the potatoes cool down a bit. Arrange each potato on the prepped baking trays and use the bottom of a measuring cup to flatten them to approximately ¼-inch thickness.
- Pour olive oil over the potatoes, and sprinkle them with garlic powder, onion powder, the rest of the salt, and black pepper. Cook in the oven for 25 to 35 minutes, or until they become crispy and golden on the edges, turning the trays midway through.
- Adjust the seasoning with more sea salt, or flaky sea salt, and add fresh herbs and vegetarian cheese if you like.
