Description
A hearty slow-cooker beef stew, filled with tender beef, vibrant vegetables, and rich flavors that warm the soul.
Ingredients
- 2 lbs beef chuck, cut into cubes
- 4 carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a skillet over medium-high heat. Brown the beef cubes on all sides, then transfer them to the slow cooker.
- Add the sliced carrots, diced potatoes, chopped onion, and minced garlic to the slow cooker.
- Mix together the beef broth, tomato paste, thyme, rosemary, salt, and pepper in a bowl. Pour this mixture over the meat and vegetables in the slow cooker.
- Cover and cook on low for 7-8 hours or until the beef is tender.
- Serve hot, and enjoy!
Notes
For a thicker stew, consider adding a cornstarch slurry in the last hour of cooking. Taste-test before serving to adjust seasoning to your preference.
