Description

A hearty slow-cooker beef stew, filled with tender beef, vibrant vegetables, and rich flavors that warm the soul.


Ingredients

  • 2 lbs beef chuck, cut into cubes
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 2 tbsp olive oil


Instructions

  1. Heat olive oil in a skillet over medium-high heat. Brown the beef cubes on all sides, then transfer them to the slow cooker.
  2. Add the sliced carrots, diced potatoes, chopped onion, and minced garlic to the slow cooker.
  3. Mix together the beef broth, tomato paste, thyme, rosemary, salt, and pepper in a bowl. Pour this mixture over the meat and vegetables in the slow cooker.
  4. Cover and cook on low for 7-8 hours or until the beef is tender.
  5. Serve hot, and enjoy!

Notes

For a thicker stew, consider adding a cornstarch slurry in the last hour of cooking. Taste-test before serving to adjust seasoning to your preference.
