Ingredients
- 1 ½ lbs shrimp, uncooked, peeled, deveined, tails removed
- 1 tablespoon canola or olive oil
- Juice from 1 lime
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- ½ teaspoon paprika
- 1 clove garlic, minced
- ¼ teaspoon cayenne (optional)
- ¾ cup plain Greek yogurt
- ¼ cup olive oil
- ½ tablespoon white vinegar
- 1 clove garlic, minced
- ½ jalapeño pepper, ribs and seeds removed
- ¼ cup cilantro leaves
- ¼ teaspoon onion powder
- ½ teaspoon coarse salt
- 2 cups finely shredded cabbage
- 10-12 small corn tortillas
Instructions
- Marinate the shrimp: Add shrimp to a ziplock bag with oil, lime juice, chili powder, cumin, paprika, minced garlic, and cayenne (if using). Seal and toss to coat. Let rest for 10 minutes or refrigerate for several hours.
- Cook the shrimp: Heat oil in a skillet over medium-high heat. Sauté shrimp for 2-3 minutes on each side until pink and cooked through.
- Prepare the sauce: Blend Greek yogurt, olive oil, white vinegar, garlic, jalapeño, cilantro, onion powder, and salt in a blender until smooth.
- Mix the slaw: In a bowl, combine half a cup of the sauce with shredded cabbage and mix well.
- Assemble tacos: Fill each tortilla with shrimp, slaw, avocado, and additional toppings as desired.
Notes
For variation, try using other proteins like fish or chicken. Adjust spices to suit individual preferences. Keep tortillas warm until serving.
