A quick and delicious shrimp and zucchini stir fry with a homemade teriyaki sauce that’s perfect for busy weeknights.

Ingredients

  • Shrimp
  • Zucchini
  • Water chestnuts
  • Garlic
  • Ginger
  • Soy sauce
  • Honey or brown sugar
  • Rice vinegar
  • Sesame oil

  • Rice or cauliflower rice (for serving)

Instructions

  1. Combine soy sauce, honey (or brown sugar), rice vinegar, sesame oil, and cornstarch to make the teriyaki sauce. Set aside.
  2. Heat a pan over medium-high heat. Add garlic and ginger, sautéing until fragrant.
  3. Add shrimp and cook until they turn pink.
  4. Add zucchini and water chestnuts, stirring until vegetables are tender.
  5. Pour the teriyaki sauce over the shrimp and vegetables, stirring to coat evenly.
  6. Cook for an additional 2-3 minutes until the sauce thickens.
  7. Serve over rice or cauliflower rice for a healthier option.

Notes

Use fresh, high-quality shrimp for best flavor. Adjust the sweetness in the sauce to your liking.
