Ingredients
- 8 oz pasta (penne or rotini)
- 1 lb shrimp, peeled and deveined
- 4 tablespoons butter
- 4 cloves garlic, minced
- 1/2 cup heavy cream
- 1/2 cup chicken or vegetable broth
- 1 lemon, juiced and zested
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 350°F (175°C).
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, melt the butter over medium heat. Add the garlic and sauté until fragrant.
- Add the shrimp and cook until pink and opaque, about 3-4 minutes.
- Stir in the heavy cream, broth, lemon juice, and zest. Season with salt and pepper.
- Combine the cooked pasta with the shrimp mixture. Transfer to a baking dish and top with mozzarella and Parmesan cheese.
- Bake in the preheated oven for 20-25 minutes until cheese is bubbly and golden.
- Garnish with fresh parsley and serve.
Notes
For a spicy kick, consider adding red pepper flakes while sautéing the garlic.
