A refreshing shrimp salad that encapsulates the joy of summer with succulent shrimp, creamy dressing, and crisp vegetables.
Ingredients
- 1 lb shrimp, peeled and deveined
- 1/4 cup mayonnaise
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon Dijon mustard
- 1/4 cup celery, diced
- 1/4 cup red onion, diced
- Salt and pepper, to taste
- Lettuce leaves
- Sandwich bread
Instructions
- In a pot of boiling water, cook shrimp until pink and opaque, about 3-4 minutes.
- Drain and let cool.
- In a bowl, combine mayonnaise, lemon juice, and Dijon mustard.
- Add cooked shrimp, celery, and red onion to the bowl.
- Season with salt and pepper.
- Mix until well combined.
- Serve the shrimp salad on lettuce leaves or as a sandwich between slices of bread.
Notes
For added flavor, chill the shrimp after cooling and let the salad rest for about 30 minutes before serving.
