Description

A refreshing shrimp salad that encapsulates the joy of summer with succulent shrimp, creamy dressing, and crisp vegetables.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1/4 cup mayonnaise
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon Dijon mustard
  • 1/4 cup celery, diced
  • 1/4 cup red onion, diced
  • Salt and pepper, to taste
  • Lettuce leaves
  • Sandwich bread


Instructions

  1. In a pot of boiling water, cook shrimp until pink and opaque, about 3-4 minutes.
  2. Drain and let cool.
  3. In a bowl, combine mayonnaise, lemon juice, and Dijon mustard.
  4. Add cooked shrimp, celery, and red onion to the bowl.
  5. Season with salt and pepper.
  6. Mix until well combined.
  7. Serve the shrimp salad on lettuce leaves or as a sandwich between slices of bread.

Notes

For added flavor, chill the shrimp after cooling and let the salad rest for about 30 minutes before serving.
