Quick and delicious shrimp rice bowls featuring tender shrimp, fluffy rice, and a creamy spicy mayo.
Ingredients
- 1 pound cooked shrimp, peeled and deveined
- 2 cups cooked rice, white, brown, or cauliflower
- 1/4 cup mayonnaise
- 1 tablespoon sriracha or hot sauce
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Combine mayonnaise, sriracha, and lemon juice in a small bowl to create the spicy mayo.
- Taste and adjust seasoning with salt and pepper as needed.
- Place a portion of cooked rice in serving bowls.
- Arrange cooked shrimp on top of the rice.
- Drizzle spicy mayo generously over the shrimp and rice.
- Sprinkle chopped green onions on top for garnish.
- Serve immediately and enjoy!
