Delicious and healthy shrimp rice bowls featuring perfectly cooked jasmine rice, succulent shrimp, and colorful vegetables.
Ingredients
- 1 pound large shrimp, peeled and deveined
- 2 cups jasmine rice
- 4 cups water or low-sodium chicken broth
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 red bell pepper, diced
- 1 cup snap peas, trimmed
- 1 cup corn kernels (fresh or frozen)
- 3 green onions, sliced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 1 teaspoon chili paste (optional, for heat)
- Salt and pepper to taste
- Fresh cilantro, for garnish
- Sesame seeds, for garnish
Instructions
- Rinse the jasmine rice under cold water in a fine-mesh strainer until the water runs clear (about 2-3 minutes).
- Combine the rinsed rice and 4 cups of water or low-sodium chicken broth in a medium saucepan. Bring to a boil over medium-high heat.
- Reduce the heat to low, cover, and let simmer for 15-20 minutes. Check around the 15-minute mark to see if the liquid has been absorbed.
- Remove from heat and let sit, covered, for another 5 minutes. Fluff with a fork and set aside.
- Heat 2 tablespoons of olive oil over medium-high heat in a large skillet or wok.
- Add minced garlic and grated ginger to the skillet, sauté for about 30 seconds until fragrant.
- Add diced red bell pepper and snap peas, stir-fry for 3-4 minutes until they start to soften.
- Add the shrimp to the skillet and cook for 3-4 minutes, stirring occasionally, until they turn pink and opaque.
- Add corn kernels to the skillet and heat through for about 2 minutes.
- Whisk together soy sauce, sesame oil, rice vinegar, and chili paste (if using) in a small bowl.
- Pour the sauce over the shrimp and vegetable mixture, stirring to coat. Cook for another minute or two.
- Taste and season with salt and pepper as needed.
- Place a scoop of jasmine rice in each bowl, then spoon the shrimp and vegetable mixture over the rice.
- Top with sliced green onions, sesame seeds, and fresh cilantro for garnish.
- Serve warm and enjoy!
Notes
Use a combination of fresh and frozen vegetables for convenience. Adjust seasoning and chili paste according to preference.
