Description

Delicious shrimp rice bowls bursting with flavor, fresh vegetables, and a spicy mayo, ready in under 30 minutes.

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 cups cooked jasmine or basmati rice
  • 1 cup fresh vegetables (bell peppers, carrots, cucumbers)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup mayonnaise
  • 1 tablespoon sriracha or other hot sauce
  • 1 teaspoon lime juice

Instructions

  1. Combine shrimp with olive oil, garlic powder, paprika, salt, and pepper in a bowl. Mix well to ensure the shrimp is evenly coated.
  2. Heat a skillet over medium-high heat. Add the seasoned shrimp and sauté until they are cooked through, about 3-4 minutes.
  3. Whisk together the mayonnaise, sriracha, and lime juice in a small bowl to create the spicy mayo.
  4. Assemble the bowls by placing cooked rice at the base, topping with sautéed shrimp and fresh vegetables.
  5. Drizzle the spicy mayo over the shrimp and veggies. Enjoy your flavorful shrimp rice bowls!

Notes

For a variation, try different proteins or adjust the spice level in the mayo. Storing shrimp separately maintains freshness.
