A vibrant bowl featuring succulent shrimp, fluffy rice, and refreshing pineapple salsa, perfect for busy weeknight dinners.
Ingredients
- 1 pound large shrimp, peeled and deveined
- 2 cups cooked white or brown rice
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup fresh pineapple, diced
- ¼ cup red onion, finely chopped
- 1 jalapeño pepper, chopped (optional for extra heat)
- ¼ cup fresh cilantro, chopped
- Juice of 1 lime
- Lime wedges for garnish
Instructions
- Cook the white or brown rice according to package instructions. Fluff with a fork and set aside.
- Combine shrimp, olive oil, garlic powder, paprika, salt, and pepper in a large bowl. Toss to coat the shrimp evenly.
- Heat a skillet over medium-high heat. Add the seasoned shrimp and sauté for about 2-3 minutes on each side, or until they turn pink and opaque. Remove from heat.
- Mix the diced pineapple, red onion, jalapeño (if using), cilantro, and lime juice in a separate bowl. Season with salt as needed.
- Divide the cooked rice among serving bowls. Top each with sautéed shrimp and a scoop of pineapple salsa.
- Squeeze lime juice over the bowls for an extra kick and add lime wedges on the side.
Notes
Choose the freshest shrimp available for the best results. Consider adding diced avocados to the salsa for creaminess.
