Ingredients

  • 1 cup orzo pasta
  • 1 lb large shrimp, peeled and deveined
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 lemon, juiced and zested
  • 1/4 teaspoon red pepper flakes
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • 2 tablespoons fresh parsley, chopped, for garnish


Instructions

  1. Cook the orzo pasta according to package directions until al dente. Drain and set aside.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the garlic and sauté until fragrant, about 1 minute.
  3. Add the shrimp to the skillet, season with salt and pepper, and cook until pink and opaque, about 2-3 minutes on each side. Remove from the skillet and set aside.
  4. In the same skillet, add the chicken broth, lemon juice, lemon zest, and red pepper flakes. Bring to a simmer.
  5. Add the cooked orzo to the skillet and stir, allowing it to absorb the flavors for about 2 minutes.
  6. Return the shrimp to the skillet, sprinkle with Parmesan cheese, and stir until melted and combined.
  7. Garnish with freshly chopped parsley before serving.
