Ingredients
- 1 pound linguine noodles
- 4 tablespoons unsalted butter
- 3 tablespoons olive oil
- 5 cloves garlic, minced
- 1 pound large shrimp, peeled and deveined
- Salt and freshly ground black pepper, to taste
- 1/2 cup fresh chopped parsley
- Zest from 1/2 of a large lemon
- 1/4 cup fresh lemon juice
- 1/2 lemon, thinly sliced in half-rounds
- Crushed red pepper flakes, to taste
- 1/2 cup freshly grated parmesan cheese
Instructions
- Bring a large pot of salted water to a boil and cook the linguine according to package instructions until al dente.
- Season the shrimp with salt and pepper.
- In an extra-large skillet, heat the butter and olive oil over medium-low heat.
- Add the minced garlic and sauté for about a minute until fragrant.
- Add the seasoned shrimp to the skillet and sauté for 4-5 minutes until they turn pink.
- Remove from heat and add the chopped parsley, lemon zest, lemon juice, lemon rounds, and crushed red pepper flakes. Toss to combine.
- Drain the linguine and add it to the skillet; toss to combine with the shrimp mixture.
- Top with freshly grated parmesan cheese and toss again to coat evenly.
Notes
For a twist, consider adding seasonal vegetables like spinach or cherry tomatoes. Always adjust the seasoning to taste.
