A refreshing and vibrant shrimp cocktail with bright flavors, perfect for summer gatherings.
Ingredients
- 1 pound shrimp, peeled and deveined
- 1 cup diced tomatoes
- 1/2 cup diced onion
- 1/2 cup diced cucumber
- 1/4 cup chopped cilantro
- 1 jalapeño, finely chopped
- 1/2 cup ketchup
- 1/2 cup fresh lime juice
- Salt and pepper to taste
- Avocado slices for garnish
Instructions
- Boil the shrimp in salted water until they turn pink, about 3-5 minutes. Drain and chill.
- In a large bowl, combine the shrimp, tomatoes, onion, cucumber, cilantro, and jalapeño.
- In a separate bowl, mix the ketchup and lime juice, then pour over the shrimp mixture.
- Season with salt and pepper.
- Chill for at least 30 minutes before serving.
- Serve in individual cups or bowls, garnished with avocado slices.
Notes
For added spice, adjust jalapeño to taste. Using fresh lime juice instead of bottled enhances flavor.
