Description

A refreshing and vibrant shrimp cocktail with bright flavors, perfect for summer gatherings.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 cup diced tomatoes
  • 1/2 cup diced onion
  • 1/2 cup diced cucumber
  • 1/4 cup chopped cilantro
  • 1 jalapeño, finely chopped
  • 1/2 cup ketchup
  • 1/2 cup fresh lime juice
  • Salt and pepper to taste
  • Avocado slices for garnish


Instructions

  1. Boil the shrimp in salted water until they turn pink, about 3-5 minutes. Drain and chill.
  2. In a large bowl, combine the shrimp, tomatoes, onion, cucumber, cilantro, and jalapeño.
  3. In a separate bowl, mix the ketchup and lime juice, then pour over the shrimp mixture.
  4. Season with salt and pepper.
  5. Chill for at least 30 minutes before serving.
  6. Serve in individual cups or bowls, garnished with avocado slices.

Notes

For added spice, adjust jalapeño to taste. Using fresh lime juice instead of bottled enhances flavor.
